My husband and I are
a big fan of milk teas even though they are considered as unhealthy drinks due
to their high calories and sugar content. Milk tea has little nutritional value
and not stomach-friendly for people suffering from lactose intolerance
(ehem...like me).
One time, my husband
accidentally discovered a lemon stand that sells a drink called Honey Yakult Lemon with Chia Seeds. He
instantly fell love at first sight with this drink that he urged me to make
similar drink at home. This citrusy drink is packed with nutrients: vitamin C
(lemon), fiber & omega-3 fatty acids (chia seeds) and lactobacillus
(Yakult). Both lemon and chia seeds are also rich in antioxidants which help
boost our immune system. Also, since Yakult is a fermented milk that has very
little lactose (milk sugar) as compared to regular milk, it is perfect for
people with mild lactose intolerance. In fact, this probiotic drink can help
lessen the symptoms of lactose intolerance.
Ingredients are
pretty straightforward except for the Chia Seeds that can only be purchased
from specialty health shops.
Ingredients
(Makes 1 cup serving)
1 bottle Yakult
1 Tbsp. Honey
1 Tbsp. Chia Seeds
Juice of 1
medium-sized Lemon
3/4 Cup Water
Instructions
Mix
all ingredients in a glass. Top with ice cubes for a cold refreshing drink.
I prefer waiting for
10 - 15 minutes before drinking it to allow the chia seeds to hydrate and
jellify. The jellified chia seeds add some texture to this drink which is like
tiny but healthier version of boba pearls.
